It Isn’t The Taste I Hate…

…it’s the texture! I’ve never been a fan of legumes. With the exception of refried beans, which I love. But on the left side of the image? Those are beans. I decided it isn’t the taste…well, you know the rest. A few months ago I got a can of cannellini beans and mashed ’em up …

Tasty Supper Idea – Beef & Cabbage

I had some things that needed to be used up today, including several roast beef “patties”- they taste like roast beef anyway, and are the consistency of canned tuna, then frozen together in patties which fall apart easily when they thaw – and a good-sized hunk of cabbage. So in my small casserole dish they …

Tasty Supper Ideas: Zucchini, Potatoes

This is a photo of last night’s supper, which included roast beef patties (something I got from the Amish store), roasted potato halves, and roasted zucchini halves. I would usually do the potatoes and zucchini as medallions, which is what I call it when I cut them into elongated circles before seasoning and roasting. I …

DINNER!!

This is the first time I’ve made chicken in the Ninja Foodi Digital Air Fry Oven. I set it at 400F for 15 minutes but it needed just a little more time, so 5 minutes at 350 did the trick. And it is delicious! I never got hungry today but at about 7:00 decided I …

BEANS!!!

RECIPE: Easy Dipping Sauce (low carb)

2 Tbsp sugar-free peanut butter1 Tbsp SF Ginger Ale (Vernors*)¼ tsp. toasted sesame seeds½ tsp. SF sweetener (monkfruit*) *These are the kinds I used. Stir everything together until smooth. I used this for chicken but it would be tasty on almost any meat I think, or in a stir-fry maybe.

Pork Zucchini Supper – Low Carb

This is quick – as was my meal, both to prepare, and to eat as it was SO delicious! (I didn’t take a photo, as it wasn’t particularly beautiful and I’m not a food stylist.) I had a pork steak thawed, and a zucchini that needed to be eaten, and I was very hungry and …

Ooooh, Gotta Try This Crust!

I found a recipe that I think Pete and I would both love, once I made some changes, but needed to find a bread-y crust-y recipe to wrap it up in. Yeah, that’s it – sort of along the lines of a calzone! It’s got to be something we can both eat, low in carbs …
