Tasty Supper Idea – Beef & Cabbage

I had some things that needed to be used up today, including several roast beef “patties”- they taste like roast beef anyway, and are the consistency of canned tuna, then frozen together in patties which fall apart easily when they thaw – and a good-sized hunk of cabbage. So in my small casserole dish they went, and I added ¼ of an onion, chopped, a drained can of fire-roasted tomatoes, and a couple tsp. of minced garlic.

I didn’t season anything since these “roast beef” patties are very salty, and the canned tomatoes were seasoned. Anyway, I covered it and roasted it at 325F for an hour, then added a mixture of pork rind crumbs and parmesan from the can on top and roasted uncovered at 375F for 30 more minutes. This is how it turned out.

It is delicious! Reminds me of the old cabbage soup recipe that people used to make to lose weight. Except it’s not soupy. And it is plenty well-seasoned also, I’m glad I didn’t give in to the urge to add anything else.

I only eat one meal/day, and sometimes a snack on those days I feel too hungry to get through the next 18-hours. I’m pretty sure that today I won’t need a snack, because I’ll probably eat the entire thing (the equivalent of 2 bowls) for my meal! This stuff is GREAT!
