I found a recipe that I think Pete and I would both love, once I made some changes, but needed to find a bread-y crust-y recipe to wrap it up in. Yeah, that’s it – sort of along the lines of a calzone! It’s got to be something we can both eat, low in carbs for me <no grains> and no animal products in it for him <no cheese>, and bonus points for quick and easy. And this is what I found. Can’t wait to try it, maybe tomorrow, and I’ll let you know how it all turns out, ok?
