
I slivered about a quarter of an onion and put it in a hot pan with a little oil while I cubed some pork tenderloin. After adding the pork I stirred it around for a couple of minutes. When the onion was soft and the meat almost cooked through I added the leftover roasted cabbage mix from yesterday, a drizzle of sesame oil, some coconut aminos (soy sauce sub), and tossed. Once the cabbage mix was heated through I sprinkled with fried sesame seeds and it was done.
Just a couple of notes: I also wanted to add ginger but it’s on a high shelf and I couldn’t get to it today (see today’s Chia’s Chat for explanation) but ginger would have been great too! Also, I really should keep some roasted cabbage mix in the fridge at all times, it’s so easy to add to any kind of meat or even other veggies, really, and flavor up for a complete meal. Lastly, I buy the sesame seeds already fried in a little packet from the Asian market, and a few of those adds a lot of flavor to various foods!
(In case you’re wondering, my first meal today didn’t fit into my plan – I just had a little cup of no-added-sugar Vanilla Chai yogurt, it was easy and cool and refreshing!)
