Well, I call it a snack, but bigger portions make it a meal – and a very filling one at that!
I spread some pork rinds on a parchment-covered baking sheet (so the cheese comes off easily) and cover them with shredded cheese; today it was sharp cheddar. Then I put them in a 325F oven for 14 minutes.
While the porkies are cheesing up, I mix together equal parts chunky salsa and sour cream. I get the salsa that is the lowest in carbs of course, and whole-fat sour cream.
It’s not beautiful, but it sure is delicious!

Ooooh, that sounds good too! Might give that a try with the porkies! I find the salsa/sour cream has a little bit of a sweet taste for some reason, we buy the medium salsa. I could eat these things every day.
